The Display Options command brings up the Display Options dialog box. Each window has its own set of render options. The options in the dialog apply to the active window. You can apply the parameters in the dialog to all the windows if you set the Apply to All Windows toggle on the bottom of the dialog.

If you activate this dialog from the View Menu, then initial value of the Apply to all Windows will be true.  If this dialog is activated from right clicking on the View Banner, then the initial value of the Apply to all Windows will be false.

There is an Apply button on the bottom of the window that will apply the values in the dialog to the view(s).

The View Type region allows you to pick between Orthographic or Perspective Views. If Perspective view is chosen, then you have the additional options of setting the Field of View ( FOV ).

The Wire Display radio buttons let you toggle between a Wireframe Display and a normal Solid Display .

3-D Icon Scale allows you to modify the relative size of the 3D icons, such as the Viewpoint Camera and Light fixtures.

The Show Ground Axis toggle allows you to turn on and off the display of the small coordiante axis in the bottom left hand corner of each graphic window.

The Head Light toggle allows you to turn on or off the headlights, which is a white directional lights that is pointing in the direction of the view.

The Show Utility Node 3D Icons toggle allows you to turn on the display of Utility Nodes that would otherwise not be visible in the scene.

The Show References toggle allows you to toggle on and off the display of Reference Nodes, which re-use content in the scene.

The Show Textures toggle allows you to turn off the display of Textures.

The Group Node Display section lets you choose between the three different settings that determine if the 3D coordinate axis should be displayed for Group Nodes.  You can chose to have it always displayed, never displayed, or only displayed for the if the Ground is currently Selected.

The Proto Display section allows you to specify how Protos are displayed.

The Show Proto Instances toggle allows you to turn on and off the display of Proto Instances.  This includes Instances of either Protos, or External Protos

The Show External Proto Declarations toggle allows you to turn on and off the display of External Proto Declarations.  This should normally be off.

There are three settings for the display of Proto Declarations:

Show Proto Body with Interface Values will display the Declaration of the Proto with all the default values substituted, so that it looks like a default instance of that Proto Declaration.

Show Proto Body without Interface Values will display the Declaration of the Proto without the default values.  This mode is best for modifying the contents of the Proto Declaration.

Don't Show Proto Body will hide the Proto.

The Use Background Node Color toggle will cause the background color in the editor windows to use color of the first Background Node in the scene.  If that toggle is set, the the background color GUI to the right will be disabled.  If that toggle is not set, you can use the color GUI to specify the RGB values of the background color.
